Pudding


Vermicelli-Pineapple Pudding

These puddings are very common in south kanara. We do puddings using suji rava, pineapple etc. So thought of doing with vermicelli along with pineapple without much ghee…I can say absolutely fat free from ghee. But carbohydrate (sugar) one cannot avoid in case of desserts.

Ingredients
--------------
Vermicelli – 1 cup
Suji rava - 4tbs
Pineapple - 20-25 small pieces
Sugar - 2 cups
Milk -2 cups
Water - 1 cup
Cardamom - ¼ tbs
Cashew nuts - 10 no’s
Raisins - 10 no’s
Walnuts - 10 no’s
Ghee -1 tbs

Method
---------
1. Roast vermicelli and suji rava till golden color in a thick bottomed pan. Keep aside.
2. Boil milk and water together and keep it ready.
3. Roast all the dry fruits with little ghee.
4. Now take thick bottomed pan with roasted vermicelli, suji rava, milk in medium flame. Stirring is necessary.
5. When water evaporates add sugar and stir continuously.
6. Slowly it will start to leave the bottom. Now add dry fruits and cardamom; mix it nicely.
7. Spread 1 tbs of ghee in a plate and spread this delicious dessert.

Unique's Kitchen



Melara (Majjige Huli)

Melara is popularly known as Majjige huli. Usually it is made up of butter milk.Hence the name.When I prepared at home it tasted so nice….so thought of sharing…..
Usually we use many vegetables….but here I tried using Tomatillos (husk tomato) and Green bell pepper.

Ingredients
--------------
Tomatillos-1 medium size
Green bell pepper (capsicum) - 1medium size
Green chillis- 4-5
Grated coconut – 1cup
Fenugreek seeds (methi seeds) -1/4 tbs
Yogurt- 2tbs

For seasoning
-----------------
Oil (I prefer coconut oil because it gives flavour as well as smell) -2tbs
Mustard seeds – 1tbs
Curry leaves – 1 string

Method
----------
1. Cut the tomatillos and bell pepper into big cubes.
2. Grind the coconut, green chillis, fenugreek seeds
3. Boil vegetables and then add this grinded paste.
4. After it boils add Yogurt (Instead of butter milk because tomatillos will be sour in taste so yogurt is suffient)
5. Boil for 2 min and season it.
Serve with rice……really its aroma spreads whole room….tastes too yummy…..

Gujje Manchuri

It is one of the seasonal dish. Gujje stands for baby jackfruit.But we can also use canned gujje.I had tasted this in Ayodhya restaurant Mangalore.Then just thought of doing in my style. My hubby loves it…..It is really yummy……

Ingredients
--------------
Gujje-1tin or 20 pieces
Corn flour -1/2 cup
Besan powder- 2tbs
Paprika-2tbs
Chili powder-1/2tbs
Ginger-garlic paste-1tbs
Salt-for taste
Green bell pepper-1small
Onion-1medium size
Spring onion-2 small bunches
Ginger-1/2 inch
Garlic-2 cloves
Pepper powder-1/4tbs
Soya sause-3 ½ tbs
Tomato sause-2tbs
Chili sause-3tbs
Oil- for frying

Method
----------
1.Mix corn flour, besan powder, paprika (it gives colour as well as flavor) chili powder, ginger-garlic paste, salt with little amount of water.
2.Heat oil for frying and dip the gujje’s and fry till it done. And keep aside.
3. In another side heat the pan with 2tbs of oil and fry thinly sized long onions till golden colour.
4.Add green bell pepper and minced ginger and garlic fry for few minutes. Then keep the heat in sim.
5.Add Soya sause, tomato sause, and chili sause. Mix it nicely. Add pinch of salt. Sprinkle chopped spring onions. And pepper powder.
6.Mix fried gujje’s with this mixture and Serve immediately.
